Crab Stuffed Mushrooms

A great appetizer on any night!!!



15 mushrooms cleaned 
6 oz. crab meat
½ cup panko or bread crumbs
1 large egg
2 cloves of garlic
½ tsp. salt
½ tsp. pepper
1 tbsp. of fresh parsley (chopped)
½ cup of shredded parmesan or mixed cheese


Preheat oven 350 degrees.
Clean mushrooms and remove stems then slice off a thin sliver from top of mushrooms so it won’t roll around when placed with its head down.  
In a food processor, place the stems, panko, egg, garlic, salt, pepper and fresh parsley.  Pulse mix the items until completely ground.  Transfer to bowl and stir in crab meat and cheese.  With a spoon gently stuff the mushrooms to overflowing then place on a baking pan with parchment sheet.  Continue to fill up all the mushrooms.

Bake for 30 minutes.  You can turn the oven down to 200 degrees to keep them warm until you are ready to serve.  Make sure to cover them so they don’t dry up.
